Rows of city kitchens

About · since April 2015
The Grub Fest began in April 2015 at Jawaharlal Nehru Stadium in Delhi: seventy restaurants and roughly a lakh people over a weekend. Since then it has run twenty-five-plus editions across seven cities — New Delhi, Gurugram, Pune, Mumbai, Chandigarh, Kolkata and Bengaluru.
The formula has barely changed: the city’s restaurants, QSRs and homegrown brands in rows of stalls, bars and somewhere to sit, and a main stage that has hosted Guru Randhawa, Nucleya, Talwiinder, Anuv Jain and Aditya Rikhari. The festival is curated by White Fox, and the Legacy Edit marks twelve years of it.

No guest or vendor quotes have been cleared for publication yet. Every card below is illustrative, and labelled so.
“Came for one headliner, stayed for four hours of eating. Plan the food before the music.”
“Our stall sold out of the signature dish by eight on Saturday. Bring double the stock you think.”
“The Group of 4 pass is the move. Split it, split the food, find a spot near the sound desk.”
“Easy load-in, power where the plan said it would be, and a crowd that actually wanted to try things.”
“Chambers was worth it for Sunday — somewhere to sit, a bar without a queue, and the stage right there.”
“We brought the kids in the afternoon and left before the headliner. Both halves of the day worked.”
“Wear shoes you can stand in for six hours. The dessert row is at the far end; walk the whole ground first.”
“The festival crowd is the best test kitchen in the city. We launched two items here.”
“Sound was huge, the flames on stage were huger. Get there early for a place near the front.”
“It's a food festival first. The music is the reason you stay late.”
“The market stalls were a surprise — we left with more tote bags than food.”
“Clear allocation, clear timings, a team on WhatsApp through the whole build.”
